I spent about two hours making the Key Lime Pie Cupcakes (mainly because I only have one muffin pan and could therefore only bake half of the recipe at a time), and it looks like a bomb went off in my kitchen, but it was sooooooo worth it. These things are really good, but my only complaint would be for more filling.

Although I take the blame for that one. I didn't have a pastry tip to insert into the cupcake to feed in the filling, so I cut out a small section from the top of the cupcake, and stuck in the cut-off tip of a plastic sandwich bag containing the key lime filling. Though I think if I had done it the proper way, there'd be more filling.

Oh well. Note to self for next time.
